When recording full screen, the yellow control bar is always visible but not recorded in the video. Most icons on capture toolbar are customisable (on/off) in Settings -> Toolbar. In Editor, you can add a date time stamp to the image by pressing J key Added Auto Date Time Stamp to the list of Output Options.
